New Delhi : When you think about dessert, what comes to mind? Where can you take your creative thinking? Urvi and Nikesh Gala, makers of The Dessert Republic®, a dessert café inspired by the founders’ love, expertise of the dessert industry, and travels throughout the world, asked themselves this question repeatedly as they mapped out the brand’s future.
Urvi and Nikesh embarked on their mission to revolutionise dessert with an insatiable hunger for change and a fire in their stomachs. The concept of The Dessert Republic® is to reimagine the traditional dessert experience for the average customer. To that end, they have developed and rigorously tested a vast menu, which they regularly expand to with new and exciting treats.
We set out to make The Dessert Republic® unlike any other restaurant in the world, and that hasn’t changed. The phrase “like a child in a candy store” was our inspiration for the sweet course. When you visit The Dessert Republic®, we want you to feel that way,” explains co-founder Urvi Gala. When it comes to dessert, you’ll be spoiled for choice, says co-founder Nikesh Gala. We filled a previously unfilled market gap by providing them with creative and decadent sweets.
Indeed, we concur. The Dessert Republic®’s menu, in its whole, is a celebration of culinary creativity. In search of relief from the oppressive heat, we entered the dessert café. The wonderful Pop Me Purple, a Japanese yuzu cooler with a splash of blue pea tea, was highly recommended by the bartenders. We checked out the menu to see what the unusual name was all about and were blown away by the staggering array of creative options.
We were intrigued by the Greek Waffle Bites, and we thought the idea was fantastic. The Dessert Republic®’s Greek Waffle Bites are inspired by Urvi and Nikesh’s trip to Greece, where they sampled gaufres (more popularly known as waffles in the West). These gaufres are reimagined as crispy, bite-sized filled waffles. And this is just the beginning. We spent a couple of hours at this dessert café, during which time we sampled the Kaffir Lime, Pink Dash, Cocoa Crunch On The Rocks Frappe, and Kashmiri Kahwa, as well as the Mexican Hot Nachos, Mocha Crackle Candy Waffle, Berry Berry Mochi Ice Cream, Brownie and Salted Caramel Popcorn Binge Bowl, and Iceberg Cookie Cream Creamsicle. We also enjoyed the Chef’s Inventions, a creative spin on sweets. Our favourite was the Hazelnut Spin Pull Me Out, a chocolate-drizzled nutty twist.
The sweets aren’t the only highlight, however. There’s much to be said for the thoughtfully arranged setting, complete with toys, books, and a snug area worthy of an Instagram post. The owners spent over six months perfecting the decor, and now each location in Mumbai, Vadodara, and New Delhi has its own unique feel. Our favourite part of the evening was seeing the lineup of loyal customers grow as they waited to enter the dessert parlour via the Smile Door, which automatically opens for customers when they smile at the door camera.
